Are you often caught in the whirlwind of daily life, switching between tasks and feeling like there's barely enough time or energy at the end of the day to cook up a nutritious meal?
Well, try out this recipe. This is a breeze to make but also delicious, nutritious, adaptable and incredibly versatile.
Ingredient swap ideas
Chicken - if you don’t have chicken thighs, use chicken breast, whole chicken legs or drumsticks. Cooking time may vary so always check for doneness. You could also swap this for other meat or proteins - have pork chops in your freezer or chickpeas in your pantry? Try those out.
Salsa - try different varieties and styles to switch things up! Salsa verde is delicious in this recipe or fresh salsa.
Cheese - experiment with different cheese flavours - sharp cheddar, Jalapeno Monterey Jack cheese or find Queso Fresco for an authentic Mexican flavour. If you are dairy sensitive, you can leave out the cheese and add some avocado after cooking.
Seasoning - to add extra flavour you can pre-season your chicken with chili powder, onion or garlic powder, cumin or simply just salt and pepper. Sprinkle some fresh cilantro and a squeeze of lime at the end of cooking for some zip and freshness.
Serve this recipe three ways
Tacos Load up soft corn tortillas with shredded salsa chicken and add your favourite taco fixings like lettuce, avocado, or sour cream. Burrito Bowls Serve chicken over top of a bowl of rice, beans, and whatever veggies you have on hand. Nachos Load up tortilla chips with shredded chicken, melted cheese and serve with extra salsa, guacamole and sour cream for a yummy twist on nachos. (Perfect for using up leftover chicken)
